Pure New Mexico red chile, milled small-batch in Santa Fe. These are the same pods as our green — just left to ripen red on the plant before drying, which deepens the flavor into something earthy, a little sweet, with a slow fruity heat.

One ingredient: red chile. No salt, no cumin, no anti-caking agents, no "blend." What you do with it is up to you — whisk it into a real red chile sauce for enchiladas, build a stew or pozole, fold it into a dry rub, or stir a spoonful into beans and rice. 7 oz resealable pouch.
